We set out to create a Sparkling Cuvée Rosé that captured the delicate cool climate flavours of New Zealand. From our vineyards in Hawke’s Bay and Marlborough, we created a sparkling wine not to stand alongside the old world, but to stand out as uniquely Oyster Bay. Its wonderful style and zesty fruit vibrancy are simply unforgettable.

Oyster Bay Sparkling Cuvée Rosé is a delightful marriage of Chardonnay and Pinot Noir. The elegant and zesty Chardonnay fruit brings finesse, and the fragrant, rich Pinot Noir imparts soft red berry fruit flavours to the wine. Dazzling and undeniably Oyster Bay, this sparkling wine is an essential for chinking glasses at a special event, or simply enjoying a casual gathering with loved ones.

Introducing Oyster Bay Sparkling Cuvée Rosé, produced in two of the world’s great winegrowing regions: Marlborough and Hawke’s Bay.

Marlborough’s unique cool climate creates Pinot Noir with rich red berry fruit intensity, which marries beautifully with the lively acidity of our Hawke’s Bay Chardonnay. When blended, they create a wine that excites the senses and provides a stunning symphony of flavours. We’re proud to source our fruit from a variety of world-class vineyard locations.

Winemaking Techniques

 

Oyster Bay Sparkling Cuvée Rosé is a skilful blend of 20% Pinot Noir and 80% Chardonnay. The fruit is gently crushed and pressed for a short period of skin contact. This gives the wine its colour and imparts delicate fragrant flavours. The wine then undergoes a primary fermentation in tank. Free run Chardonnay juice is cold settled to partial clarity, followed by a slow, temperature controlled primary fermentation for several weeks to develop elegant, assertive flavours. The Pinot Noir and Chardonnay wines are blended to create the Cuvée base wine which is inoculated with neutral yeast to ensure the pristine and aromatic fruit characters are retained. A secondary slow fermentation in tank is undertaken to naturally impart delicate bubbles in the wine. Following a short period of lees contact, the wine is bottled young to capture the fresh, varietal intensity. The result of this process is a wonderfully delicate, finely bubbled Sparkling Rosé.
