We set out to create a Sparkling Cuvée Brut that captured the delicate cool climate flavours of New Zealand. From our vineyards in Hawke’s Bay and Marlborough we created a sparkling wine not to stand alongside the old world, but to stand out as uniquely Oyster Bay. Its wonderful style and zesty fruit vibrancy are simply unforgettable.

Oyster Bay Sparkling Cuvée is made to capture and showcase New Zealand’s unique cool-climate varietal intensity by embracing the best of modern New World winemaking technology.
Oyster Bay Sparkling Cuvée Brut is made from 100% Chardonnay grapes which give the wine elegance, finesse and minerality. We select premium Chardonnay clones with small, intensely flavoured grapes.
The vines are grown on ancient alluvial river terraces and produce concentrated, pure varietal flavour along with a natural zesty acidity, which is ideal for creating Super Premium sparkling wine. We harvest the fruit early and use neutral yeasts to accentuate the Chardonnay varietal character.

Our winemaking philosophy is to capture the special character of New Zealand’s cool climate viticulture – to consistently produce distinctly regional wines that are elegant and assertive with glorious fruit flavours.
The flavours we love so much are there from the moment we pick the grapes. They come from the unique cool climate and ancient soils where our vines grow and we work hard, using a science and a love of the land to create remarkable flavours in every bunch.
