We set out to create a Sparkling Cuvée Rosé that captured the delicate cool climate flavours of New Zealand. From our vineyards in Hawke’s Bay and Marlborough we created a sparkling wine not to stand alongside the old world but to stand out as uniquely Oyster Bay. Oyster Bay Sparkling Cuvée Rosé is a wonderful marriage of Chardonnay and Pinot Noir. The elegant and zesty Chardonnay fruit brings finesse, and the fragrant rich Pinot Noir brings soft red berryfruit characters to the wine. We select premium Chardonnay clones with small, intensely flavoured grapes.
These low-yielding vines are grown on ancient alluvial river terraces and produce concentrated, pure varietal flavour along with a natural zesty acidity, which is ideal for creating Super Premium sparkling wine.
The Pinot Noir vines are grown on alluvial silt soils to provide uniform ripening and fruit concentration. These Pinot Noir grapes are carefully handpicked to protect the fruit flavours, which also deliver a delicate colour to the wine.
Our winemaking philosophy is to capture the special character of New Zealand’s cool climate viticulture – to consistently produce distinctly regional wines that are elegant and assertive with glorious fruit flavours.
The flavours we love so much are there from the moment we pick the grapes. They come from the unique cool climate and ancient soils where our vines grow and we work hard, using a science and a love of the land to create remarkable flavours in every bunch.
