  • What is the Charmat method?

Charmat is a method of producing sparkling wines that uses minimal winemaking intervention. The main difference to the champagne style of making sparkling wine is that the natural secondary fermentation takes places in a pressurised tank, rather than in a bottle. We chose tank fermentation because it retains the bright, fresh varietal fruit characters in the wine. While winemaking methods can certainly help determine sparkling wine styles, ultimately the true quality of sparkling wine comes from the quality of fruit for the making of the base wine (Cuvée).
