The secondary fermentation in a closed tank doesn’t give it the toasted brioche notes often found in Champagne, but its mineral hints and Granny Smith apple notes add complexity. "It is a great time of the year for sharing a lovely bottle of bubbles, actually anytime is, but sunshine and bubbles and friends, and holidays, just seem to go together well.
Thanks Stewart for sharing this one with me on a perfect sunny afternoon in the courtyard at No. 1 The Strand. I have to confess I am not a huge fan of sparkling wines, it just seems to disappear out of my glass too freely; however, I did find this wine very pleasant indeed, not too sweet and not too dry. I would be very happy combining this with Bluff oysters served over ice with a squeeze of lemon juice and a good grind of black pepper, perfect! Or perhaps on pumpernickel bread cut into triangles, topped with sour cream, your oyster and then topped with salmon caviar.
Oyster Bay sparkling cuvee brut made from 100 percent chardonnay grapes has an elegant finesse. It has lovely lime flavours, citrus and white peach, accentuated by a finely bubbled palate with a crisp refreshing finish. Enjoy!
